Hi Joseph,
Eggs seem to present a particular problem for lots of people. Egg substitutes are generally specific to particular applications/recipes.
For cornbread, and for many of your recipes, I would suggest ground flax meal. It has to be ground to be effective. One tablespoon of ground flax meal to three of water, stand it for about 5 minutes at room temperature, and that is your egg.

Hi Tyler,
For any sponge cake the best alternatives to egg will be 1. Flax egg. 2. Apple sauce.

For the Cake: coconut cake

  • 1 (15.25 ounce) box white cake mix
  • 8 ounces sour cream, divided
  • 1/4 cup water
  • 1/4 cup vegetable oil
  • 3 large eggs
  • 1 cup cream of coconut like Coco Lopez

and this recipe as well please (lol) This one is a pound cake using a box bake

1 box white cake mix
1 stick unsalted butter
1 c sugar
8 oz. Cream cheese
3 eggs
Vanilla to taste
1 cup AP flour

I came here for this. I am trying to make a poundcake and looking for the best substitute. Would the flax seed be better than applesauce for (3) egg substitution recipe? What would give the closest texture for a pound cake please?

Hi Hallie,
sometimes the answer to a question is ‘it depends’, and that is the answer to your question too.
There is only one egg substitute for meringue for example- aquafaba. this is obvious I know, but it illustrates the point.
Other than that you could think about the fat content of the substitute, flax seed for instance has a high level of fat and adds richness to a recipe.
I think you can experiment a little, your baking instinct will kick in,
